Feeling inspired to be healthy, today was spent making some delicious nummies to snack on throughout the next couple of days. We made a whole wheat banana bread filled with hemp and sesame seeds for some extra texture; and for lunch - a "caprese/greek" inspired salad with yellow peppers, sweet onion, mini bocconcini, fresh basil leaves, cucumber, and tomatoes grown from our back garden - we topped the salad off with a drizzle of balsamic vinegar and olive oil. To go along with the salad, we toasted some cracked black pepper and roasted garlic artisan bread from a local bakery. A truly delicious way to spend the day if I do say so myself! Enjoy the photos!
