Ingredients minus the baking soda
Recently my family has been attempting to switch over to a gluten-free diet as both my mother and I are allergic to wheat/wheat products. It's not easy finding good gluten free baked goods as they pretty much always either taste like cardboard, or have the texture of a rock.. After searching for some gluten-free cookie recipes, I stumbled across this AMAZING gluten free recipe for ginger cookies (which are my holiday favorite). And honestly they're SOOO much better than even the regular cookies in my opinion. Found here.
The one change that I made, was instead of having:
I substituted all of these dry ingredients for 2 cups + 1 tsp of a gluten free artisan flour. I followed the rest of the recipe as directed. Again, these are FANTASTIC - I get a full 3 dozen out of the recipe, and they're pretty much gone by the end of the week.... someone send help... Enjoy the photos!

- 3/4 cup sorghum flour
- 1/2 cup potato starch
- 1/4 cup tapioca starch
- 1 tsp xanthan gum
